My favorite is to add them to my salads, I simply cut them vertically down the middle, then remove the seed and dice the avocado with a paring knife and then use a large spoon to scoop it out. It's simple to make bite size pieces without making a mess.
You can eat avocados in a verity of ways. You can add them to omelets sandwiches, pitas, salsa or you can eat them alone with cherry tomatoes topped with EVOO & organic apple cider vinegar or balsamic vinegar. You can also use them in place of fat when cooking and baking.
